A wonderful part of any Road Adventures journey are the camping meals, prepared in the cooking area of your iconic trailer or over an open fire at an amazing campsite. There’s something special about creating and sharing a tasty meal in the great outdoors. Does mealtime get any better?
Go beyond hot dogs and marshmallows. With some imagination and preparation, you can cook up an outdoor masterpiece. Here are three recipes to whet your appetite.
Fire-Roasted Turkey
For a delicious turkey feast on your Road Adventure, try this campfire recipe. What you’ll need:
- Whole turkey
- Rosemary
- Parsley
- Thyme
- Olive oil
- Salt
- Stuffing mix (optional)
- Cheesecloth
- Aluminum foil
- Spade
- Rake
- Firewood
- Matches
Creating coals
First, start a rip-roaring fire, making sure it is big enough to create lots of hot coals. Then take your spade and dig a hole next to the fire. The hole should be at least 2 feet deep to accommodate your turkey.
Prepare the Bird
Once the turkey is properly cleaned, gather your olive oil, salt and mixture of rosemary, thyme and parsley for a delicious rub. If you are into stuffing, now’s the time to fill the bird with your favorite stuffing mix.
Cheesecloth Wrap
After you’ve done your delicious rub and stuffed the turkey, it is time to wrap the turkey in cheesecloth. After you’ve covered it all in cheesecloth, wrap the bird in three or four layers of aluminum foil.
Turkey Underground
Now is the time to prepare your roaster. Take your spade or a rake and remove about half the fiery hot coals from the fire. Completely cover the bottom of the pit with one to two inches of hot coals. Place your wrapped turkey on top of the hot coals, then rake or shovel the remaining coals from the fire pit onto the top of the turkey. Then cover the coals and turkey with plenty of dirt.
Count to three
A turkey in the 8-12 pound range will take about three hours to roast. Add an extra 30 minutes for every 4 pounds over that range. Watch the clock, unbury and unwrap your bird, then enjoy a turkey feast!
Chili Haystacks
For an easy, tasty meal or filling snack, try these chili haystacks. Here’s what you need for two servings:
1 can (15 ounces) chili with beans
2 packages (1 ounce each) corn chips
1/2 cup shredded cheddar cheese
1-1/2 cups chopped lettuce
1 small tomato, chopped
1/2 cup salsa
2 tablespoons sliced ripe olives
2 tablespoons sour cream
Heat and eat
Warm up the chili in a saucepan and divide the corn chips between two plates. Then top with the chili, cheese, lettuce, tomato, salsa, olives and sour cream. Serve while it is hot!
Campfire Burritos
Prepare these breakfast burritos before you hit the road and you’ll have a tasty – and filling – start to your camping day. Here’s what you’ll need:
1 lb. sausage
16 eggs
1 yellow onion
3 cloves garlic, minced
6 medium potatoes, chopped
2 cups cheddar cheese, shredded
4 green onions, chopped
3 tablespoons, parsley, chopped
8 or 9 tortilla shells
Salt
Pepper
Aluminum foil
Salsa/hot sauce
Before getaway day
The day before you head for the hills, let’s cook! Chop potatoes, boil until soft. Chop green onions, set aside. Crack 16 eggs and cook over low heat until you have soft, scrambled eggs. Salt and pepper to taste. Sauté yellow onions and garlic in two tablespoons of olive oil. Add sausage to onion mixture and cook. Combine sausage mixture, scrambled eggs, potatoes, cheese, green onions, parsley, salt and pepper in large bowl. Divide ingredients into tortilla shells. Roll them up and wrap them in aluminum foil.
Hit the road
Don’t forget to pack your burritos (and some salsa or hot sauce, too)! Then warm them over the campfire coals for a great breakfast in the great outdoors!
